Split Pea Soup


  • 2 cups dried split peas
  • 1 quart cold water
  • 1 quart chicken stock
  • 1 1/2 pounds ham hock
  • 2 onions, thinly sliced
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 5 stalks celery, chopped
  • 5carrots, chopped
  • 2 potatoes, diced


Directions

  1. Add first three ingredients to crock-pot and soak overnight. 
  2. Once peas are soaked, add to crock-pot: ham bone, onion, salt, and pepper. Cover, cook on high for 3 hours. 
  3. Add celery, carrots and potatoes. Cook on low for 1 hour or until vegetables are tender. Remove ham hock & set aside.
  4. Remove half of soup to the Blendtec blender. Blend on MULTI-USE setting for full time. Add back to crock-pot. Remove ham from ham hock and add to soup.
  5. Serve with biscuits.
