Cinnamon Raisin Bagels



Add to Blendtec mixing bowl in this order:

1 1/2 tsp. yeast
2 Tbs. sugar
2 cups warm water

Allow to sit for up to 10 minutes. Then add:

1 Tbs. coconut oil
1 Tbs. salt
3 Tbs. sugar
6 3/4 cups bread flour
1 1/2 cups raisins

Blend on BREAD setting until dough pulls away from the sides of the bowl. Then press AUTO KNEAD.

Add 1 Tbs. cinnamon and run AUTO KNEAD setting again.

Roll the dough into a ball and place in a bowl, oiled with coconut oil. Turn to coat, cover and allow to rise 1 hour in a cold oven.

Cut dough into thirds and roll into ropes. Cut each rope into 4 equal pieces and roll each piece into a ball. Punch thumb through the middle to make a hole then carefully stretch hole until it's quarter size.

Cover and let stand for 30 minutes.

Fill a 4 quart saucepan 2/3 full with water, add 1 Tbs. sugar and 1 tsp. salt. Bring to a boil. Drop 2 or 3 bagels into boiling water and cook for 30 seconds; turn over and cook for another 30 seconds.

Carefully lift each bagel out with a slotted spoon and drain.

Place a casserole half full of water on the bottom rack of the oven and preheat to 450*.

Bake for 10 minutes, then turn cookie sheet and flip bagels over. Bake another 10-12 minutes.
