Oatmeal Banana Muffins

These are a simple gluten-free treat and a great way to use up old bananas:


1 cup greek yogurt
2 eggs
2 ½ cups old-fashioned oats
½ cup packed brown sugar + a dash of stevia
1 ½ tsp. baking powder
½ tsp. baking soda
2 bananas
2 tsp. vanilla
dash of cinnamon

Mix on BATTER setting until smooth. Then remove blender jar from Blendtec unit and mix in a handful of chopped pecans or walnuts if desired. 
Spoon into greased muffin tin. Garnish with a sprinkling of raw oats and semi-sweet chocolate chips. 

Bake at 400* for 20-25 minutes.

Trim Healthy Pancakes

Put in Blendtec Blender:

2 cups old-fashioned oats

Blend on MULTI-PURPOSE setting.  Meanwhile, add to Blendtec mixer:

2 cups egg whites
2 cups low fat cottage cheese
1 Tbs. + 1 tsp. baking powder
1 tsp. liquid stevia extract
1/2 tsp vanilla
1/2 tsp. cinnamon

Add ground oats and mix on CAKE setting. Pour 1/4 cup batter onto lightly greased griddle per pancake.

Pumpkin Pie Smoothie

Add to blender jar:

2/3 cup pumpkin puree
1/3 cup plain greek yogurt
2/3 cup milk of your choice
a few shakes of pumpkin pie spice OR a shake of cinnamon, ginger, and nutmeg
1 Tbs. coconut oil
stevia to taste
6 ice cubes

Blend on SMOOTHIE setting.

Fat Stripping Frappa

Chocolate Frappa

Add to blender jar:

1 cup unsweetened almond milk
1/2 cup water
1 heaping Tbs. cocoa
1/2 tsp. glucomannon powder
two pinches of salt
a few sprinkles of Stevia extract
dash of vanilla


Blend well on MULTI-USE setting (about 20 seconds). Then add:

16 ice cubes.

Blend on SMOOTHIE setting. Then add:

1 scoop whey protein powder (or 1/2 scoop if this is a snack)

Blend again on SMOOTHIE setting for about 30 more seconds.


Strawberry Frappa

Omit cocoa
Use only 12 ice cubes
Add a handful of frozen strawberries

Vanilla Frappa

Omit cocoa
use 1 tsp. vanilla


Coffee Frappa

Replace water with extra strong 1/2 cup of cold brewed coffee

Half Wheat Bread

Add to Blendtec mixing bowl:

4 cups of warm water
1 Tbs + 1 1/2 tsp. yeast
1/4 cup sugar

Allow to sit for up to 15 minutes. Then add:

1 Tbs. + 1 tsp. salt
1/3 cup oil
5 cups bread flour
6 cups whole wheat flour



Mix on BREAD setting with dough hook. When dough pulls away from the sides of the bowl, push the AUTO KNEAD button. When cycle is complete, place dough in greased ceramic bowl. Cover with a dish towel and place in a warm oven to rise for 1 hour.

After first rise, separate dough into 4 loaves and place in greased loaf pans. Place back in now cool oven, cover all with dish towel and allow to rise 45 minutes.

Bake in 350* oven for 35 minutes.

Yields 4 loaves of bread

Secret Agent Brownies

Add to blender jar:

1 can black beans, drained
3 eggs
1/4 cup cocoa powder
2 Tbs. coconut oil
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1 Tbs. instant coffee
dash of sea salt
2 tsp. vanilla
1/3 cup cream cheese
3/4 cup sugar (or 1/2 cup sugar & 1/4 tsp. stevia)

Mix on multi-purpose setting. Pour into greased 8x8 baking dish. Sprinkle with:

1/4 cup chocolate chips
1/2 cup chopped pecans or walnuts

Bake for 35 minutes at 350*.

Overnight Chia Pudding

Like tapioca pudding, but healthy. This is a great breakfast on-the-go.

1 1/4 cups plain almond milk
1/2 tsp. glucomannon powder

Add to blender jar and mix briefly on multi-use setting. Then pour into a glass jar and add:

1/2 Tbs.-1 Tbs. chia seeds
dash of vanilla
dash of stevia powder

Place lid on he jar and shake well. Refrigerate overnight.
